Saw these beauties on one of my food group. Sandhya Harsh posted them, Coin Tikki's....Sweet potato, potato, oats and more... delicious with a sweet and sour tomato chutney and a spicy coriander-ginger-chili chutney. Dinner tonight with a bowl of Broccoli soup.
Veggie Coin Tikkis
Boiled Sweet potatoes - 3 to 4 mashed
Boiled potatoes - 2 to 3 mashed
Oats - 1 cup/katori
Poha - 1 cup
Cabbage grated - 1/2 cup,
Carrot grated - 1 small piece
Chopped green chillies -1 - 2
Chopped green coriander - 1/2 cup
Bread crumbs, I used homemade ragi-amaranth - 1/2 cup
Sesame seeds/Til - 1/4 cup
Salt to taste
Garam masala - pinch
Roasted Jeera powder - 1/2 tsp
Red chilli powder - 1 tsp or more
Chat Masala - 1tsp
Ghee - 1/2 tsp + 1 to 2 tsp for shallow frying
Dry roast oats and grind to powder or wash and soak oats.
Wash and soak Poha.
Peel and mash boiled sweet potatoes and potatoes.
Grate cabbage and carrot (peel & grate). In a large mixing bowl, add oats (either soaked or powdered), Poha and mashed potatoes and sweet potatoes.
Add grated cabbage, carrot.
Add finely chopped green chillies, green coriander, salt, jeera, red chilli powder, chat masala and garam masala.
Mix all ingredients and make a homogenous mixture. Add 1/2 tsp oil and shape into tikki.
Spread bread crumbs in a plate and sesame/til in another.
Roll tikki's in bread crumbs and sesame/til gently.
Place them on a plate.
Heat a tawa or nonstick pan.
When hot, shallow fry the tikkis on both sides to a golden brown on medium - low heat.
